Baby is :

During week 32, Axel weighs around 4 pounds (about the size of a Napa cabbage ) and is about 17 inches long, taking a lot of space in the uterus.

She now has toenails, fingernails, and real hair. Her skin is becoming soft and smooth as she plumps up in preparation for birth.

How I’m Feeling:

I’m feeling fine. I would love to see the time go a little faster, haha! Damn it’s so long during the last weeks. Everything is done, her room is done, the paintings for her room are done (I made two for her), her suitcase for the hospital is done.. oh wait I still need to finish mine too! but she could arrive and everything would be super ready for her.

I try to cherish every single moment of that pregnancy since it’s the last one.. every kick remind me of how magical carrying life is.

How I’m Changing:

Not changing much.. I just find this pregnancy harder (in the end) that the two other pregnancies.. Maybe it’s because it’s the third one in less than 4 years.. Some times I have contractions, but not the braxton hicks type that are painless.. they come with pain.. not super intense, but enough to be super annoying. I’m still bleeding randomly..

What I’m Eating/What I’m NOT Eating:

Yeah! Less heartburn this week! But for how long, hahahahaha!

Still eating the same, I just don’t have a big appetite.

I have to stop myself sometimes otherwise I would eat tons of sugar. What kind of pregnant lady am I.. craving just at the end of the pregnancy?!?!

Total Weight Gained:

At the beginning of the week it was +11.5 pounds.


Workouts: 

The usual, walking, playing with the kids, going to the park..


Prenatal Care :

Still taking vitamins, calcium supplements and eating healthy too.

I saw my doctor on October 7. Everything is doing fine. The bleeding are still caused by a very sensible cervix.. We had an hard time listening to her heart.. she was moving like crazy, hahaha!

I saw her once again during an ultrasound (my doctor does one every single time).

My next appointment is on October 21, 2014 (34 weeks). I will also have a big ultrasound on October 15, 2014 (33 weeks).

Sleep:

My nights are crappy.. I get up every 1h30.. each night!! -_-

Vegan Banana Bread

I have a vegan cookbook called EVERYTHING VEGAN BAKING COOKBOOK. Yesterday I decided to try the banana bread recipe that was in it. Usually I don’t do banana breads without either margarine or non dairy milk.. I was a little skeptic at first, but the result was very impressive and delicious!!!! My husband was shocked to learn that there was no oil, margarine or non dairy milk in it.. he liked it a lot! In fact we all liked it a lot, haha!

Servings

1 loaf

Ingredients

* 3 medium very ripe bananas, mashed

* 1/4 cup brown sugar, packed

* 1/2 cup sugar

* Egg replacement (for 2 eggs) ,so 2 teaspoons of powder (egg replacer)

* 4 tablespoons water

* 1 teaspoon pure vanilla extract

* 1/2 cup whole wheat flour

* 1 1/2 cups unbleached all-purpose flour

*  teaspoon salt

* 1 teaspoon baking soda

* 1/2 cup chocolate chips (or any other ingredients you love)

Directions

* Preheat oven to 350′F

* In a small bowl combine the egg replacer powder with the water. Set aside for 1-2 minutes to thicken.

* In a bowl or a stand mixer bowl, combine the mashed bananas, vanilla, sugar, brown sugar and the egg replacer.

* In another bowl combine the two kinds of flour, salt and baking soda.

* Add the dry mixture to the wet mixture. Mix well. Then fold in the chocolate chips (or any other ingredients you want.. another nuts, seeds, raisins, carob..).

*  Pour mixture into a loaf pan and bake. (I’m always using silicone)

* Bake for about 50-55 minutes. If a toothpick comes out clean, the bread is ready.

* Remove from the oven, let it cool for few minutes, serve and Enjoy!

Vegan Spinach Soup

Nothing too fancy.. but soups even if they are super easy and cheap.. are ALWAYS so good and comforting.

Yesterday I did a spinach soup since we had a lot of fresh baby spinach in our refrigerator 🙂

Spinach is very good for pregnant women (well it’s good for everyone even while not pregnant or for men too). Spinach provides vitamins C and E.Those vitamins help reduce the risk of eclampsia and contain high levels of folate, calcium, and iron.

Servings

4 bowls

Ingredients

* Olive Oil

* 1 large onion, chopped

* 3 garlic cloves, minced

* 5 cups vegetable broth

* 1/2 teaspoon ground turmeric

* 1 teaspoon ground cumin

* Salt and pepper, to taste

* 3 cups diced and peeled potatoes

(3 medium size potatoes)

* 5 cups fresh spinach

Directions

* In a large pot, heat (medium-high) oil, onion, garlic, salt, pepper, turmeric and cumin for 2-3 minutes or until the onions are softening.

* Add the potatoes and the vegetable broth. Stir and when the mixture is boiling, reduce heat and and simmer for  about 15 minutes or until the potatoes are cooked.

* When the potatoes are tender, add the spinach and cook for another 1-2 minutes.

* Remove from heat and with a blender, puree until smooth.

*Enjoy!

Vegan Chocolate Cupcakes

Yesterday I made cupcakes and they were super delicious (haha they still are since we didn’t have time to eat them all already, haha)

Room temperature they are super moist and delicious.. and if you put them in the refrigerator they will have a fudgy/brownie texture.. and it’s awesome that way too! In fact I prefer them cold.

So here is a basic chocolate cupcake recipe I’m sure you will enjoy as much as we do here.

Servings

10 large cupcakes (or 12 smaller)

Ingredients

* 1 cup sunflower milk

(or any other non-dairy milk)

* 1 teaspoon apple cider vinegar

* 1/3 cup coconut oil, melted

* 3/4 cup sugar

* 1 teaspoon pure vanilla extract

* 1 cup all-purposed flour

* 1/3 cup unsweetened pure cocoa powder

* 1/4 teaspoon salt

* 1/2 teaspoon baking powder

* 3/4 teaspoon baking soda

* 1/3 cup chocolate chips, chopped

*  Frosting (optional)

Directions

* Preheat oven to 350′F.

* Whisk together the sunflower milk and vinegar in a bowl, and set aside for a few minutes.

* In a bowl or a stand mixer bowl, pour the non-dairy milk mixture. Add the sugar, coconut oil and vanilla extract. Beat on medium speed until it gets ”foamy”.

* In another bowl combine all the dry ingredients remaining (Flour, salt, baking soda, baking powder and cocoa powder)

* Add gradually the dry ingredients into the wet ingredients. Mix well.

* Add the chopped chocolate chips and mix again.

* Spoon the mixture into muffin pan and bake. (I’m always using silicone! No need to throw papers!)

* Bake for about 20-22 minutes. If a toothpick comes out clean, the cupcakes are ready.

* Remove from the oven and let them cool.

* Frost your cupcakes (optional)

Vegan chocolate Frosting

Yesterday I made a batch of chocolate cupcakes (you can find the recipe HERE) with my big girl, here’s the recipe for the icing we used on them 😉

You’ll see, it’s sooooooooooooo good, you just want to eat it with a spoon, hahaha!!!

Servings

1 batch (around 2 cups)

(enough for 12 cupcakes)

Ingredients

* 1/2 cup margarine, softened

(be sure that your margarine is vegan)

* 1/3 cup unsweetened pure cocoa powder

* 1/4 cup chocolate chips, melted

* 1 teaspoon pure vanilla extract

* 3 cups confectioner’s sugar

* 3-5 tablespoons sunflower milk

(or any other non-dairy milk)

Directions

* In a bowl or a stand mixer bowl, cream the margarine and the cocoa powder together.

* Add the melted chocolate and the vanilla extract.

* Beat at medium speed, add gradually the confectioner’s sugar. You can add the non dairy milk a little at a time. It took me 5 tablespoons to get to the perfect texture (for me, maybe your perfect texture isn’t the same as mine)

* Use or store in a container in the refrigerator.

Baby is :

Baby is the size of a pineapple

During week 31, Axel is around 16 1/2 inches long now and weight around 3 1/2 pounds (about the size of a pineapple).

She can turn her head from side to side, and her arms, legs, and body are beginning to plump out as needed fat accumulates underneath her skin. She’s moving.. A LOT!

How I’m Feeling:

I’m feeling fine, like always. this week was intense, hahaha! I did so much canning, I was tired after that. I went to a romantic evening at the restaurant with my husband (the kids were at grandma for few hours) We don’t do that much, but it’s always fun.

I made an hard decision at the end of last week… I decided that our family will be done after Axel. I wanted 4 kids but 3 will be just fine too. I finally decided that because I was thinking about my big girl and the fact that it’s already hard to live in her body (with her autism and stuff) , it’s hard to live with others (not always but she gets annoyed very fast) so having more and more kids was not a wise decision.  Dalie is important for me, more than my own preferences. I will do anything for her to make her life easier. That way, they will never have to share their rooms (they have one each), I will not impose my choices to my kids.. everything will be just fine. At first I was a little sad knowing that it would be my last pregnancy and it’s almost the end.. but after thinking more about it, I will enjoy every minute of it, and when it will be over, it will be the beginning of another chapter in my family’s life. Now we will watch them grow, make big plans and have fun all the 5 of us.  I feel in peace with my decision (my husband understand the reasons and thinks the same)

How I’m Changing:

I feel like a volcano, hahahaha! I’m burning from inside, it’s so intense and very annoying, haha! Other than that, I’m not changing much.. I still had bleeding.. like always! A little more intense this time, but I guess it’s always the same thing.

What I’m Eating/What I’m NOT Eating:

I don’t have a lot of appetite.. I guess it’s because of all these crazy heartburn!!!

Total Weight Gained:

Don’t know 😉


Workouts: 

The usual, walking, playing with the kids, going to the park..


Prenatal Care :

My next appointment is on October 7, I’ll be 32 weeks pregnant.

Sleep:

I wake up like every 1h45/2h during the night, awww!

During week 30, Axel is about 16 inches long now and weight over 3 pounds (about the size of a large cabbage).

Her eyesight continues to develop, though it’s not very keen; even after she’s born, she’ll keep her eyes closed for a good part of the day. When she does open them, she’ll respond to changes in light but will have 20/400 vision, which means she can only make out objects a few inches from her face. (Normal adult vision is 20/20.)

How I’m Feeling:

I’m feeling fine 🙂 I was very happy to see my little girl once again. I’m so lucky to have a doctor who have the fancy 3D ultrasound machine in his office. I think she kind of look likes her brother Auguste, haha! Can’t wait to confirm that at my next ultrasounds and when she will be born. Awww 10 weeks left!!

How I’m Changing:

Not changing much, I start to feel that the end will come soon.. I have pressure on the cervix and the usual bleeding for no reasons.. My doctor checked me at my appointment and I’m doign great, baby Axel is ok, the placenta is ok.. and I’m not dilating or something like that, so it’s ok.

What I’m Eating/What I’m NOT Eating:

nothing changed except the fact that weird kind of nausea returned… I can’t eat much otherwise I feel like crap.. I have heartburn too.

Total Weight Gained:

Good question, hahahaha! I guess not much since last week!


Workouts: 

Lots of walking outside, playing outside with the kids.


Prenatal Care :

Still taking vitamins, calcium supplements and eating healthy too.

I had an appointment on September 23. (30 weeks). I was so glad to see my little sweetheart once again. She was sleeping the face right into the placenta, hahaha! Everything is doing great.

I’m sleeping kind of okay.. waking up a lot of time.. always thirsty.. awwww!
