The kiwi is an awesome fruit, not only because it’s super delicious but because it has a lot of health benefits.
One kiwi gives you more vitamin C than an orange. It’s packed with fibers (so very good for fighting constipation during pregnancy, hahaha), vitamin E, folic acid (it’s very important for expectant mothers and it’s always better to take folic acid in real food than in pills) and many more minerals.
Depend on the number of kiwis you are using
* 4 cups water
* 1 cup lemon juice
* Peel the kiwis. (Use only ripe fruits!) Slice kiwis into 1/4-inch chips. The thinner the slices are, the faster they will dehydrate.
* Place all the kiwi slices in the lemon solution and let them rest for 4-5 minutes.
* Drain the extra lemon juice and lay the kiwi slices on the dehydrator tray. Leave enough space between kiwi slices on the tray to allow sufficient air flow for drying.
* Put the trays into the dehydrator and set the temperature to 135’F . Close the dehydrator and let the kiwis dry. Check them after 4-5 hours (about half way through) so you will be able to manage the time left. It will also help the slices to dry more evenly. It took me around 8-9 hours to get great kiwi chips.
*Kiwi chips are not like crispy fruit chips like banana for example. they are more chewy. Store dried chips into an air tight container when they are fully cool. Store at room temperature.
