During week 16, Axel’s heart is pumping about 25 quarts of blood each day. In the next few weeks she will double in size.

The patterning of her scalp has begun, though his locks aren’t recognizable yet. She’s even started growing toenails.

How I’m Feeling: 

I’m feeling awesome! At my last appointment (16 weeks+6 days) the doctor told me (he did an ultrasound like at every visit) that he was like 99% sure it was really a girl (at 12 weeks they told me girl too) so I guess Axel is really a girl, hehe. I was so excited that I bought her tiny outfits, nothing much, but just few so in case it’s finally a boy I will not cry because I spent money like crazy, hahaha! (they were all in super sale.. 6$ for 3 carter’s pj is not much, haha)

How I’m Changing:

My baby bump is still growing, I stopped having acne like a teenager and I had the worst knee pain ever!! Last time I had that I was like 39 weeks pregnant.. go figure why I was in pain like that, I didn’t gained any weight yet.. thanks life it’s over now, yeah!

What I’m Eating/What I’m NOT Eating:

I’m eating normally, but not much, I don’t have a very big appetite. Not much snacking too. i still eat a lot of fruits and veggies, drinking plenty of water, drinking smoothies.. like the usual me.

Total Weight Gained:

Nothing yet.. on the end of week 16, on the scale it was -3.5 pounds. (And even if I have a baby bump! that only means one thing.. i’m gaining on my belly but loosing elsewhere on my body..)


Workouts: 

I do some weight lifting , but nothing too extreme and some elliptical. I feel great and I don’t gain tons of weight like with my daughter.

I also walk outside and do outdoor house work.


Prenatal Care :

My next appointment is July 21, so at 20 weeks + 6 days, it will be my 20 weeks ultrasound. The next day (July 22) I have my appointment with my doctor too. After the 20 weeks ultrasound we will be very sure of the gender, hehe.

Still taking my vitamins and calcium supplements.

Sleep:

I sleep well, hehe!

How to make Kale Powder

After buying all that kale the other day I decided to make kale powder (I found that idea on internet while browsing for kale-related articles).

Kale powder can be use in many things like in sauces, in scramble tofu, is salads, in smoothies, as a garnish… the possibilities are.. more than just these few, haha. In fact I stopped pulsing the kale just before having a super fine powder, I wanted to look like dried parsley.. to use as an herb in recipes.

I love kale, I could eat kale everyday of my life (and spinach too… in fact all greens.. I’m a big fan)

You need..

* Kale

(I used a big bunch, the final product is a little over 1/2 cup of kale powder)

Steps

* Cut out the thick ribs oh each kale leave.

* Soak kale in water or special veggie/fruit soap (like I did) to remove any sand or dirt. Rinse kale and place on a towel and allow to dry. The dryer the leaves are, the faster they will dry in the dehydrator.

*  Lay out on your dehydrator trays, and then dry at about 125’F (52.5’C) until they are all dry and crispy. you can check them after few hours to see how they are doing. Mine were dry in 4 hours.

* Place all the crispy dehydrated kale in your food processor and pulse until you reach the perfect texture for you.

* Poor the powder in an airtight container (I used a mason glass jar) and store.

How to Freeze Kale

The other day I bought 3 big bunch of kale for 0.99$ each, what a deal! I decided to freeze one bunch, dehydrate one and keep one fresh in the fridge to use this week (It’s all clean in a Tupperware, hehe)

I decided to freeze some to use in smoothies. That way I will have kale on hand anytime and it will bring some freshness in the smoothie (because it’s frozen). I looooooooove to put kale or spinach in my smoothies! There is always one of them or both in them.

Kale is fantastic, it’s low in calories, it contains a lot of calcium, vitamin K, vitamin A and iron! And iron while pregnant is important!

You need..

* Kale (I used one large bunch)

Steps

* Flash Freeze kale by laying it out on a cookie sheet and placing it in freezer to freeze.

* Once frozen, begin to quickly place  kale in zip top bags or freezer safe containers.. Quickly because it will begin to thaw fast.

* Remove the more air you can and label your package.

During week 15, Axel is busy moving amniotic fluid through her nose and upper respiratory tract, which helps the primitive air sacs in her lungs begin to develop.

How I’m Feeling: 

I’m feeling great, well mentally great, haha! On the last day of week 15, I got my 2 last wisdom teeth removed, damn it was painful! And since I’m pregnant, I’m not taking any pain medication. At least there will be no more suffering with those teeth! After the procedure with the dental surgeon I was looking like a squirrel, hahaha! Other than that I feel great!

How I’m Changing:

I’m not changing a lot, I still have about the same bump as last week.

I still look like Pamela Anderson, hahahahahaha, I’m about to break all my t-shirts, hahaha!

I feel more and more movements.. not strong kicks, Axel is not strong enough yet, her boons need to harden before! But I clearly feel when she’s moving a lot.

What I’m Eating/What I’m NOT Eating:

I’m eating like normally, well maybe even more fruits than usually, especially kiwis!

But I don’t have a lot of appetite, so I eat small meals, and raw fruits and veggies..oh and plenty of water.. all day long!

Total Weight Gained:

Nothing yet.. on the end of week 15, on the scale it was -4.5 pounds. (And even if I have a baby bump!)


Workouts: 

I do some weight lifting , but nothing too extreme and some elliptical. I feel great and I don’t gain tons of weight like with my daughter.

We had tons of rain so I wasn’t really able to go outside to play with the kids.. awwww!


Prenatal Care :

My next appointment is June 22, so at 16 weeks + 6 days.

Still taking my vitamins and calcium.

Sleep:

Best week since the beginning, I wake up in the middle of the night because I’m SUPER thirsty but I sleep well. It was about time, hahaha I finally stopped looking like a zombie 24/7, haha!

OH YEAH!! SECOND TRIMESTER has started!!!! 😀 😀 😀

Axel can now squint, frown, grimace, pee, and suck her thumb! Kidneys are producing urine.

How I’m Feeling: 

I’m feeling great! I cannot wait to be in December! I’m sure summer will go by pretty fast this year!

I cannot wait to have my 20 weeks ultrasound date (I have to call back tomorrow) to be able to be not 80% (like at 12 weeks) sure but 100% sure of the gender. Can’t wait to start the room! Awww!!

How I’m Changing:

The baby bump is getting harder, not that bigger, just harder. I have breast pain like when I was breastfeeding.. well not pain ”pain” but more like in the middle of a heavy lactation process. I didn’t felt that for my son, maybe it’s because I didn’t breastfed my daughter, and this time my body knows what to do.. don’t really know for sure. I feel Axel moving, well not a big surprise since it’s my 3rd and not my 1st one. It’s the most magical feeling in the universe. Soon it will be big kicks.. awwwwww! Other that that, this week morning sickness came back.. go figure why.. after a week off!! But at least they came for 2 days and fade away again.

What I’m Eating/What I’m NOT Eating:

Eating normal, but not like the old saying ”eating for two”, I’m eating the same as before getting pregnant, so not a lot, but healthy. I drink PLENTY of water all day long. I try not to let any craving get to me. I don’t snack during the day, only at night I take a snack.. but for example, yesterday it was a pear and a nectarine.. so it’s the worst things on earth, hehe.

Total Weight Gained:

Nothing yet.. on the end of week 14, on the scale it was -5 pounds. (And even if I have a baby bump!)


Workouts: 

I do some weight lifting (not extreme!) and some elliptical each day 🙂 (+walking, lawnmower.. things like that) I feel so great after working out! Funny fact, each time I’m done, baby Axel is moving like crazy (because I feel her already, after all, it’s my 3rd child!) It’s not only making me feel great, but it’s good for the baby and I don’t gain weight like crazy.


Prenatal Care :

My next appointment is June 22, so at 16 weeks + 6 days.

Still taking my vitamins and calcium.

Sleep:

Vegan Vegetable and Lentil Loaf with maple glaze

Today I saw on a friend’s facebook a link for a vegan loaf recipe, I went to read it and felt in love (haha) so I tried it! The original recipe is from THE SIMPLE VEGANISTA and the link for the recipe is HERE. The final product was soooooo delicious, in fact the most delicious vegan loaf I ever tasted. In my life I tried a lot of vegan or vegetarian loaves but that one.. damn it’s addictive! A month before my due date I will cook a ton of meals to put in our big freezer downstairs (that look like a fridge) to be ready for the arrival of our 3rd child and let me tell you that I’ll be making this recipe!!! I didn’t used celery or chipotle pepper like in the recipe. I changed the celery for another carrot. I also added more garlic and maple syrup. Next time I’ll do more glaze and maybe use some nuts too.

So tonight’s dinner was the loaf, with a fruity couscous salad and steamed veggies (carrots, sweet potatoes, corn and edamame)

Servings

4-6

Ingredients

LOAF

* 1 cup cooked green lentils

( 3/4 cup will be pureed, the other 1/4 cup will be left like that)

* 3 tablespoons flax seed meal

(I grounded flax seeds)

* 1/3 cup water

(for the flax mixture, to replace egg)

* Olive oil

* 5 garlic cloves, minced

* 1 onion, chopped

* 1 red bell pepper, finely diced

* 2 carrots, peeled and finely diced

* 3/4 cups old fashioned oats

* 1/2 cup oat flour

(I don’t have oat flour in my pantry so I grind some oats to make my own flour)

* 1 teaspoon dried thyme

* 1/2 teaspoon cumin

* 1/2 teaspoon onion powder

* 1/2 teaspoon garlic powder

* Salt and pepper (to taste)

GLAZE

* 3 tablespoons ketchup

* 1 tablespoons balsamic vinegar

* 1 1/2 tablespoon pure maple syrup

Directions

* For the lentils (1 cup), keep 1/4 cup like they are in a bowl and puree the other 3/4 cup. set aside.

* Preheat oven to 350′F

* In a small bowl, combine the flax meal and the water (1/3 cup). Mix. Let rest for a good 10-15 minutes (in the fridge is a good idea). It will form a kind of jelly. It will be used as a binder in the loaf.

* In a pan, heat oil. Saute the garlic and the veggies for 4-5 minutes, then add the spices. Remove from heat.

* In a large bowl combine the two forms of lentils, the veggies, the flax ”egg”’, the oat flour and the oats. Mix well.

* In a loaf pan (mine is in silicone but if you use a metal pan, put parchment paper before putting the mixture in the pan), press down the lentil mixture.

* To make the glaze, combine the 3 ingredients in a small bowl and mix.

* Spread the glaze over the loaf.

* Cook for around 45 minutes. Remove from oven then wait few minutes before slicing it.

* Serve and Enjoy!

Vegetarian Quesadillas

-VEGETARIAN-

The other night (yeah I know I’m late once again on posting things on my blog, haha!) I was watching a very average cooking show (in french) and they were cooking quesadillas.. so I wanted to cook some too, because it’s delicious and that my family would be happy too. So I did.. and it was good 😀

Servings

4-5

Ingredients

* 2 cups red kidney beans

(I used small kidney beans)

* 1 red bell pepper, finely diced

* 2/3 cup corn

* 1/2 cup diced tomatoes (with juice)

*1 cup shredded aged cheddar

(or any other kind of cheese)

* 1/2 teaspoon chili powder

* 1/2 teaspoon taco seasoning

(I used homemade)

* Salt and pepper (to taste)

* 10 small whole wheat tortillas

* vegetable oil (optional)

Directions

* Preheat oven to 400’F

* In a bowl with a potato masher, crush the beans.

* Add the bell pepper, the corn, the spices, half of the cheese (1/2 cup) and the tomatoes. Mix well.

* On baking sheets, place 5 tortillas. Spread the bean mixture on every tortillas. Divide the remaining cheese to be able to put on each tortillas.

* Place the remaining 5 tortillas on each one on the baking sheets.

* You can brush a little bit or oil on the tortillas to get a crisper texture.

* Cook for 20 minutes.

* Remove form the oven and cut each tortillas in 4.

* Serve and Enjoy.

Axel is now 3 inches long. Fingerprints have formed on Axel’s tiny fingertips, her veins and organs are clearly visible through her still-thin skin, and her body is starting to catch up with her head.

How I’m Feeling: 

I’m feeling great, the bad days are behind me, woohoo! Next week I’ll start my 2nd trimester. Thanks life we have central air conditioning in our house, because it’s super hot outside, haha

How I’m Changing:

My belly had kind of started to become smaller.. but at the end of week 13, it was back again, go figure. But it would be impossible for somebody to not figure that I’m pregnant!!

What I’m Eating/What I’m NOT Eating:

I don’t eat a lot even if I don’t vomit all day anymore. I don’t let any kind of craving be in my head, I don’t want to gain weight like crazy. So I still eat tons of raw fruits and veggies, water, smoothies… but I can eat normally again, I mean soups, Mexican food.. well there is still tons of smell that makes me sick.. still coffee, grease, peanuts.. I’m no longer sick but I have often an upset stomach.

Total Weight Gained:

Nothing yet.. on the end of week 13, on the scale it was -3.5 pounds.


Workouts: 

I re-started working out! YAY! So I’m doing weight lifting (nothing over the top) and elliptical. I feel great when I’m working out.


Prenatal Care :

My next appointment is June 22, so at 16 weeks + 6 days.

At my last visit, I was 13 weeks, and I had another ultrasound, I was surprised, my doc is making one at every visit. Once again baby Axel is growing and doing wonderful. Still a strong heartbeat. I will never see her enough.

I still take prenatal vitamins and calcium supplements too, because I started having pain in my left knee.. like in every other pregnancy and I know that each time it’s a sign of calcium deficiency. I don’t take enough food that are a source of calcium.

Sleep:

I sleep well, I just get up to drink all night, I’m ALWAYS thirsty! haha!
